Parmigiano-Reggiano DOP, one of the oldest cheeses in the world, is still produced using the same ingredients, techniques, and artisanal craftsmanship passed down through history. It is the master cheese-maker, the “casaro”, who, with his expertise and care, creates the iconic wheel we recognize today.
