Let’s sit at the table and savour the variety of dishes on offer, with a buffet of flavours from the famous pumpkin Cappellacci, a dish similar to ravioli, to the salama da sugo, a local pork sausage, the Comacchio eels, the Pasticcio ferrarese, or macaroni pie, and let’s finish with the famous Coppia, the Ferrara sour dough bread par excellence, the one that Riccardo Bacchelli called “the best in the world”.

Ferrara and its territory are a real paradise for gourmands. There is an impressively vast range of food and wine – from the typical “pane ritorto” twisted bread – here called “COPPIA” - certified by the PGI label, to CAPPELLACCI CON LA ZUCCA (egg-pasta stuffed with pumpkin and served with meat sauce), to PASTICCIO DI MACCHERONI (oven-baked short pasta in a besciamella sauce with mushrooms, flavoured with truffle and nutmeg, covered with a sweet shortcrust pastry), in a skilful combination of sweet and savoury ingredients. SALAMINA DA SUGO is a particularly tasty dish, consisting of a traditional spherical sausage, usually served with mashed potatoes.

PAMPAPATO is the local dessert. It consists of a sweet chocolate cake whose dough is mixed with almonds, pine nuts, and candied fruits. On the coast you can taste other specialities such as the refined EELS of Comacchio, the CLAMS of Goro, as well as the D.O.C. “Vini delle sabbie” from the recognized Bosco Eliceo area, whose origin dates back to a Burgundy vine variety of the XVI century. The rice produced in this area is also very refined, especially some varieties such as Arborio and Carnaroli, both certified by the PGI label. All traditional foods are high quality and deeply rooted in the territory, as a strong network of food festivals testifies.
